Little explorers go BANANAS for these Chocolate chip muffins!

Here’s a quick and easy recipe for yummy and healthy banana-chocolate chip muffins. I’m a mom of an energetic four-year-old who is always on the go! We are always heading out on an adventure; whether we are heading to the Museum of Science to check of the new dinosaur exhibit or going to explore a new neighborhood in our beautiful city, Boston, we are always on the move! While loving our adventures, we often struggle with finding healthy and delicious snacks to fuel us for the road.
I came up with this scrumptious one bowl recipe that is a perfect solution for when you and your little explorer want to venture from your palace and into the woods!

Recipe
Heat oven to 375*
2-3 ripped Bananas (mashed in a large bowl)
2 Eggs (large)
½ Cup of brown sugar
½ Cup of vegetable oil
½ Cup of Almond Milk
½ tsp of Vanilla extract
¼ tsp of salt
½ tsp of Cinnamon
¼ tsp of Nutmeg
1 tsp of Banking Soda
1 tsp of Banking Powder
1 Cup of White Flour
1½ Cups of Whole Wheat flour
1 Cup of Semi Sweet Chocolate Chips
Directions
Grease muffin pan (should make 12 medium sized muffins) with earth-balance (or butter). In a large bowl mashed the three ripped bananas. Whisk in eggs, sugar, oil, vanilla, and almond milk. Whisk until well blended. Add in white flour and continue to whisk. Add salt, cinnamon, nutmeg, baking powder and baking soda and continue to whisk. Add whole wheat flour and continue to whisk until well blended. Fold in chocolate chips. Spoon in 2-3 tablespoons of batter into pan. Bake for 20-25 minutes or toothpick comes out clean. Let cool for 4-6 minutes and enjoy this healthy and delicious snack! A snack so perfect your little explorer will go bananas for them!
